What's For Dinner? 3 Easy Answers to the Dreaded Question

Confession time: I am a terrible cook. Not only that, but, I have no real desire to get better. When I do venture into the kitchen, I'm a stranger in a strange land, just the opposite for my husband who truly gets a charge out of creating yummy dishes. And I get a charge out of eating them. Every so often though, he has to travel, which causes my children (and me) a great deal of consternation. "Mom, what are we going to eat?" And I have to remind them that somehow, "Mommy survived for 31 years before dad came into my life; we'll figure it out." Of course, that's just before I go into full on panic mode. But here are three crowd pleasers that even I can do.
Taco night: Even the most basic cook among us can brown some ground beef and add a sauce packet (or if you're feeling really ambitious, make up your own). I like taco night because it's truly collaborative; the kids can cut up the lettuce, avocado and throw some cheese in a bowl while I'm browning the meat. We put out the taco shells, flour tortillas, or salad bowls and let people make whatever they want.
Crockpot Magic: This right here, was made for people like me. Chop up a bunch of stuff and throw it in a pot, hit the switch and walk away. Ingenious! I know there are hundreds and hundreds of dishes you can make in a crockpot but I tend not to venture too far out of my comfort zone so that typically means turkey chili. How's this for an easy recipe?
Ingredients:
1 pound lean ground turkey
1 small onion, chopped
1 can (28 ounces) diced tomatoes, undrained
1 can (15 ounces) kidney beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 can (8 ounces) tomato sauce
1 to 2 tablespoons chili powder
Breakfast for dinner: Or "Brinner" as it's called in these parts. Scrambled eggs, cheese omelets, bacon, sausage, waffles, French toast, wheat toast, white toast (you get where I'm going here), it's all so yummy when the sun goes down. And the kids get such a charge out of it because it's out of the ordinary.
