The Duggars' Snacking Secrets (Plus Michelle's Recipe for Homemade Apple Dumplings!)
One of our favorite fall activities is to go apple picking at the nearby apple orchards. We pick huge, huge amounts of them to take home for snacks and for cooking. We eat them so fast! Years ago, I would can some of them. But honestly -- we’ll eat them faster than we can even think, especially when they are fresh-picked.
Sometimes we’ll also do baked apples. They’re really simple to make: Just cut a hole in the middle of the apple and put cinnamon and sugar in and bake them whole. The kids like those a lot. We also make an awesome apple dumpling that is out of this world. Of course, they are not the healthiest things, but they are so good as a special treat with vanilla ice cream (editor's note: see below for Michelle Duggar's special apple dumpling recipe – with an unexpected secret ingredient!).
For the most part, though, we just slice them and eat them fresh. We’ll pick mainly Red Delicious and Granny Smith. My kids love the really sour ones. They also love pickles -- the Duggars are pickle people! Anybody who knows the Duggars well knows we love to pickle stuff. My kids have this new recipe they make: They’ll slice apples, spritz vinegar on them and eat them with a little bit of salt and vinegar. I’ll find the kids eating that as a snack in the middle of the afternoon.
It’s not for me, but they like it a lot. We’ll do snack time twice a day or three times depending on how late our schedule goes and that is their favorite snack! No apples go to waste in the Duggar house.
Michelle Duggar's Apple Dumplings
2-3 cans crescent rolls (or biscuits)
3-4 apples (peeled & cut into chunks)
1 1/2 sticks butter
1 1/2 cups sugar
1 t. cinnamon
1 can (12 oz.) Mountain Dew (or 7-Up)
Flatten biscuits with hands; put apple chunks in and pinch sides shut. Place in a 9x13 baking dish. Bake at 350° for 10-15 min (until they are no longer gooey). In small saucepan, melt butter, sugar and cinnamon. Pour over dumplings. Pour Mountain Dew over all. Bake 15-20 minutes, or until golden brown. Enjoy!
