An Addictive Side Dish You Can Prep in 10 Minutes

All you need is 10 minutes, and this easy side is in the oven. We combined sweet maple syrup with spicy chili sauce to make one of the most addictive side dishes we’ve had in a while!

Start by peeling, then cutting a butternut squash into 1-inch cubes. To save some time, a friend suggested not peeling the squash before roasting – she says that the roasting time is enough to make the skin tender and it actually adds great texture. Your preference!

Add a few tablespoons of olive oil, maple syrup and hot chili sauce, such as sriracha, to the squash. Toss everything together and spread the squash into one even layer on a baking sheet.

Now, you're ready to roast! Serve the squash warm when it's done. If you want to put it over the top, add some crumbled feta cheese and a few basil leaves.

Sweet and Spicy Butternut Squash

Cook Time: 55 minutes
Total Time: about 1 hour
Yield: serves 2-4

Ingredients:
•    1 medium butternut squash, peeled and cut into 1-inch cubes
•    2 tablespoons olive oil
•    2 tablespoons maple syrup
•    1 tablespoon hot chili sauce (suggested: sriracha)
•    1 teaspoon salt
•    1/4 cup crumbled feta cheese
•    basil leaves

Method:
1.    Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with aluminum foil.
2.    Toss squash with olive oil, maple syrup, chili sauce and salt.
3.    Bake in the oven for 30 minutes, give the squash a stir, then bake for another 20-25 minutes until the squash is tender and caramelized.
4.    Top squash with feta cheese and basil leaves.
