Protein Packed Recipe for Teething Toddlers: Egg Pancake

I've always been keen on having my daughter eat an egg every day. Studies show that eggs do not adversely affect your blood cholesterol profile, but that eggs boost brain function and health, and protect eyesight.
However, it was hard to get Alex to eat eggs. Some days she would have a little taste of a scrambled egg, but usually she would reject it. I found that using a whole egg to make French toast yielded better results.
I discovered this recipe by accident. I began to make French toast for my daughter. I whisked up the batter with a fork, and then reached into the refrigerator for the bread. I forgot that it had gone moldy and I'd tossed it the day before.
So I went ahead and cooked up the French toast batter like a pancake, with no bread. My daughter gulped down the soft pancake in mere moments. Her gums are very sore these days as she is cutting her first teeth, so watching her enjoy eating something so easily was a welcome sight. Now egg pancake is easily one of her favorite foods.
Ingredients
1 egg
Splash of vanilla extract or vanilla flavoring. I use Trader Joe's, which is alcohol free and contains sugar cane.
Splash of cream (use whole milk if you don't have cream.)
Dash of cinnamon
Tiny pinch of salt to boost flavor
Method
1. Heat a small skillet over medium heat.
2. Whisk all ingredients together in a bowl briefly until mixed, but not frothy.
3. Spray your skillet with cooking spray or add a small amount of vegetable oil to coat.
4. Pour the batter into your skillet.
5. Cook until set on one side, then flip (it doesn't matter if the pancake stays intact) and cook until set on the other side.
6. Cut into strips and serve as finger food.
