7 Recipes For Fresh Fall Pumpkins

There is something that makes me very happy to see pumpkins arrive at the market. Maybe it's because I love the vibrant colour, or that they are the herald of adding autumn foods to the menu. It could simply be that I love the taste of pumpkin, both savoury and sweet.

Both carving and pie pumpkins are in short supply this year in the north-eastern part of the U.S. and in the south-eastern part of Canada due to the heavy storms we endured during the summer. Don't wait too long to buy that Halloween pumpkin this year.

1. Pumpkin Butter

I made this pumpkin butter for the first time last year, and it's going to be a staple for me from now on. The flavour is quite vibrant and it's great on toast or crackers, or as a dip for apples. The recipe says to discard the seeds, but you can always roast them for a treat.

My very favourite use for the pumpkin butter is pumpkin bread. This was a specialty of my grandmother, and this is the closest recipe I've ever found to what she used to make. I adored my grandmother, so for me, every bite of this bread is a little bit of happiness.

The taste of pumpkin is a bit subtler in this pumpkin risotto than in the recipes above. i love risotto just about any way, and this was an interesting take on it.

This recipe for pumpkin cream cheese is a real kid-pleaser. Give them some vegetables and fruit cut up to scoop up this delicious (and super easy) dip.

The companion piece to the cream cheese recipe is pumpkin hummus, which is a more savoury option for dipping. Also very fast to make, the pumpkin gives it a litte je ne sais quoi.

6. Pumpkin Soup with Bacon and Blue Cheese

If blue cheese is too strong a flavour for your child's palate you can always substitute a mild cheddar of some Gruyere for this pumpkin soup with bacon and blue cheese. This soup cooks in about the time it takes to cook the bacon.

7. Pumpkin Apple Stir-Fry

Okay, this pumpkin apple stir-fry isn't the most beautiful thing to look at but the salty/sweet combination jumps right out at you.
