7 Recipes For A Heat Wave - Soups and Salads

The weather report says that Toronto will hit 39C today. That's 102F, which is just too hot for me to contemplate. Luckily, I don't have to, because I am writing this while looking out at a rather large mountain in the French Alps. It is considerably cooler here, much to the chagrin of my travelling companions. Personally, I'll take the coolness over extreme heat any day.

Of course , by the time the mercury hits 100F, who wants to eat, let alone cook? Here are some recipes that will cool you down without having to turn on your stove or your oven. Not only that, they are all easy and quick to make, so that you have more time to run through the sprinkler with the kids.

1. Tuna and Bean Salad: This is one of my absolute favourite recipes for the summer. I've been making it for years and it's great on a bunch of levels. You get lots of protein, you get lots of nutrients from the beans, you get some greens and it takes about 5 minutes to make. And it just happens to be delicious.

2. Spinach Avocado Salad: This salad is light and refreshing, just what you need during a heat wave.

3. Arugula, Goat Cheese and Walnut Salad: Another simple, refreshing salad to put together at the last minute. This salad works for both family and guests.

4. Olive Salad Taverna: I just love this recipe. I'm a big fan of piquant flavours and this works for me. Not only that, if you plate it individually, it's really pretty  to look at.

5. Tomato Pear Salad: I served this salad on a crusy bread to make more of a meal of it. You can also add a bit of blue cheese or goat cheese to it if you like.

6. Bean Salad with Walnuts and Cilantro: This recipe does use the stove for about 2 minutes - if you toast the cumin seeds. If you don't want to, just toss them into the recipe anyway.

7. Grilled Watermelon: When I first came across this recipe I thought it was weird. What could be more refreshing than cold watermelon, so why would you grill it? Then I tried in and was sold.
