7 Recipes for a Rainy Day

After weeks of sunny days and intense heat I woke up to a  dark, wet, cold morning. I want you to know I'm not complaining here as I like July temperatures to appear in July, rather than in May. I come from a land of ice and snow, so I find too much heat stressful. No doubt the little fledgling vegetables in my garden are also enjoying a respite from the burning sun on their tender leaves. And like everyone's crops, they will be enjoying a nice long drink of water.

Wildly varying temperatures begs the question, what do you eat. Somehow all the spring vegetables and lettuces in my refrigerator don't have the same appeal that they did when it was 95F. I've pulled together some recipes that will warm you up until the hotter temperatures return.

1. Chickpea Soup

I know that as soon as the temperature goes down, I start thinking about soup. This rosemary garlic chickpea soup is great because it's made from ingredients that you likely have kicking around your pantry. If you want to kick up the vegetable component, you could add some spring vegetables like asparagus or spinach to it. This was also terrific the next day for lunch.

2. Mushrooms on Toast

I adore mushrooms on toast. It's a fast and easy thing to make and it always satisfies me. In the photo above I added a fried egg for my husband. If you like, you can add greens, such as beet greens, or spinach or kale.

3. Chicken Teriyaki

This chicken teriyaki never gets old at our house. The actual chicken part of it stays the same, but vary the vegetables according to the season. Asparagus is fantastic with asian flavours, or some baby bok choy.

4. Irish Stew

Irish stew is a terrific thing to make if the weather is going to be cool and rainy for a few days, because of course, stew always gets better when it sits for a day. You can change up the vegetables in this as well for a slightly lighter and more spring-like flavour.

5. Swedish Meatballs

Who doesn't love meatballs. I really don't know why it makes me think of my childhood, because I don't think my mother made them very often, but maybe it's because this recipe for Swedish meatballs is so appealing to kids.

6. Cheese Bread

This recipe for cheese bread is made with a basic buttermilk base, but then there are a whole lot of variations for you to try. If you would prefer a sweet bread or one with fruit, you can add that rather than cheese and sundried tomatoes as I've made here. It's a great time to bake, before it gets too hot to put the oven on.

7. Put-Back Potatoes

Put-back potatoes was one of my daughter's favourites growing up. Really, you just slice baking potatoes in half, bake until they are done, then carefully scoop out the flesh, taking care not to rip the skin. Mix in a bit of butter if you like, and some cheese like cheddar, Gruyere or mozzarella, then put the mixture back into the potato skins, return them to the oven and bake until the cheese has melted. You can stick them under the broiler for a minute or two if you like a browned top. These are really rich, so they are definitely an occasional treat, but hey, on a rainy day, sometimes that's just what you need.
